Easy pasta dinner with a few ingredients…
My favorite go to meal when I have no idea what to make for dinner is PASTA. It is so easy to prepare and you only need a few ingredients to boost it up to an entree. Served with a slice of bread, this is a meal that was a crunch time touchdown that only took about 30 minutes from start to finish.
Ingredients needed:
1 Tablespoon of Olive Oil
1 cup of chopped onion
6 cloves of garlic, finely chopped
1 (14.5 ounce) can petite diced tomatoes – do not drain them
1 1/2 cups chicken stock – I use Swanson, unsalted
1 Tablespoon dried oregano
8 ounces of string pasta – I used CAPPELINI which is a diameter between 0.85 mm and 0.92 mm[1] is a very thin variety of Italian pasta. Like spaghetti, it is rod-shaped, in the form of long strands.
1/2 teaspoon kosher salt
5 -10 ounces of fresh spinach
1 ounce freshly grated Parmesan cheese
I prepare all my ingredients ahead of turning on the stove, which will make this process go alot faster.
Heat a large dutch oven to medium high heat and add the tablespoon of olive oil. Let is get warm..
Add your chopped onions and stir to coat the onions with the oil. Cook for approximately 3 minutes, then add your chopped garlic. Cook till onion is just starting to turn brown.
Add the diced tomatoes, chicken stock, oregano and pasta IN THAT ORDER. Bring liquid to a boil.
Make sure to stir and submerge noodles into the liquid after they have become pliable.
Cover, reduce heat to medium-low and cook 7 – 10 minutes, or until pasta is almost done.
Add spinach in batches, stirring each batch until the spinach wilts. Once all spinach has been added. Remove from heat.
Let stand 5 minutes, then sprinkle with Parmesan cheese.
Serve with warm garlic bread…..
