Throughout my childhood, I always enjoyed a classic pot roast; however, this is the easiest dinner recipe you will possibly ever make.

I had never heard of “Mississippi Pot Roast” before I discovered this recipe.

I took the liberty of changing a few things about this recipe; however, do not leave out the Peperonchini Peppers.

They will not add any spiciness to the roast, but they will pack a punch of flavor.

My version of “Mississippi Pot Roast” requires a rub to impart flavor to the meat.

The slow cooking method will create a delicious, tender roast your family will love.

Pot Roast Rub Ingredients

Rub for the roast: mix the following:

Ingredients for the Easiest Pot Roast

1 tablespoon Kosher salt

3/4 teaspoon garlic powder

3/4 teaspoon sweet paprika

1/2 teaspoon red pepper flakes

1 teaspoon onion powder

1 teaspoon ground mustard

1/2 teaspoon ground coriander

Easiest Directions for Dinner

Apply rub, liberally to all sides of the CHUCK ROAST.

I bought a 4 lb roast and cut it in half.  Set roast in the bottom of your slow-cooker.

butter lying on top of your pot roastOn top of the roast, pour one McCormick AU JUS GRAVY packet and one HIDDEN VALLEY RANCH DIP packet.

Sit one full STICK OF BUTTER on top of the roast.

**No need to add any liquid.  As the butter melts, it will prevent the roast from scorching the bottom of your slow cooker.

Lay approximately 8 jarred, Pepperoncin Peppers(drained) around the butter, on top of the roast.

And drop in 3 – 4 jarred roasted red bell peppers.

Place the lid on your slow-cooker and allow to cook on LOW for 8 hours.

After 8 hours, gently remove roast parts (it should be falling apart tender).

Spoon out 1 cup of liquid and combine with 1 tablespoon of cornstarch.

Pour remainder of liquid into a saucepan.

Whisk in cornstarch mixture to saucepan.

This gravy is the best part of the recipe!  I always serve this with the best homemade mashed potatoes.
