    These creamy Parmesan mashed potatoes were a great alternative to baked potatoes, which we have most Friday nights.  This recipe has a simple twist.  These potatoes are not only creamy but very rich.  Be careful just how much cheese you add. Consider leaving on the skin of the potato for the beneficial nutrients. What makes these potatoes different? At The Fresh Market, I found a different kind of potato, I have never used before; Cinacia Buttercream Potatoes. Cinacia is an organic, sustainable farm in Colorado.     It does not get any simpler than Pork Medallions with Mustard Sauce, for a weeknight meal.  There are only 200 calories per 3 ozs of pork with 2 Tablespoons of sauce, making this an excellent calorie-counting meal.  I was a bit apprehensive about this sauce, but it was so easy.  Make sure to have all your ingredients measured and ready to go, the sauce will prepare and move very quickly.     This Meaty Skillet Lasagna is simple and requires only a 10″ non-stick skillet for cooking. Because I have a bounty of tomatoes from my garden, I substituted the 28-ounce can of whole peeled tomatoes with ones from my garden.
