These creamy Parmesan mashed potatoes were a great alternative to baked potatoes, which we have most Friday nights. This recipe has a simple twist. These potatoes are not only creamy but very rich. Be careful just how much cheese you add. Consider leaving on the skin of the potato for the beneficial nutrients. What makes these potatoes different? At The Fresh Market, I found a different kind of potato, I have never used before; Cinacia Buttercream Potatoes. Cinacia is an organic, sustainable farm in Colorado. Very similar in aroma and color of the russet potato, but the buttery texture makes them perfect for mashed potatoes. Jo Ann Burrington’s recipe that…

Pork Medallion Dinner in Under 30 Minutes
It does not get any simpler than Pork Medallions with Mustard Sauce, for a weeknight meal. There are only 200 calories per 3 ozs of pork with 2 Tablespoons of sauce, making this an excellent calorie-counting meal. I was a bit apprehensive about this sauce, but it was so easy. Make sure to have all your ingredients measured and ready to go, the sauce will prepare and move very quickly. I purchased one of those packaged, small Hormel tenderloins. See if you can find the ones without a marinade already on the tenderloin. I couldn’t, so I bought the peppercorn tenderloin and rinsed off most of the peppercorns, then thoroughly…

Weeknight Meaty Skillet Lasagna
This Meaty Skillet Lasagna is simple and requires only a 10″ non-stick skillet for cooking. Because I have a bounty of tomatoes from my garden, I substituted the 28-ounce can of whole peeled tomatoes with ones from my garden. Since the recipe calls for the canned tomatoes to be placed in a food processor, I cored out my tomatoes, quartered them, pulsed twice in my Vitamix to make a chunky puree, perfect for this recipe. Do not use “no-boil” lasagna noodles in this recipe, as they will fall apart during cooking. Make sure to use either whole-milk or part-skim ricotta, as the NON-FAT ricotta will result in a very…

My Mama’s Frugal Meatloaf
My mom was an incredible cook! She prepared delicious meals on such a strict budget. Today, I made her classic meatloaf. As an avid deer hunter, my dad provided much of our protein, for the winter months, with Venison. I know there are animal lovers out there who would find this outrageous, but feeding a family of four on a firefighters salary in the ’70s and ’80s was very tough. Without deer meat or fish, caught from local lakes, we would have starved. Meatloaf was not one of my husband’s favorite meals, however, he changed his mind after trying my mom’s recipe. Made with pantry staples, it is not only…

Easiest Slow Cooker Pot Roast Ever!
This post contains affiliate links. If you make a purchase, I will be paid a small percentage. Throughout my childhood, I always enjoyed a classic pot roast; however, this is the easiest dinner recipe you will possibly ever make. I had never heard of “Mississippi Pot Roast” before I discovered this recipe. I took the liberty of changing a few things about this recipe; however, do not leave out the Peperonchini Peppers. They will not add any spiciness to the roast, but they will pack a punch of flavor. My version of “Mississippi Pot Roast” requires a rub to impart flavor to the meat. The slow cooking method will create…
