    These days, home cooks can buy fresh herbs at their local supermarket.  Most retailers sell cilantro, flat leaf parsley, curly leaf parsley, basil and thyme. Always buy the freshest bunch.  Try smelling them. Fresh herbs should have a strong, fresh aroma.  The leaves should look clean, green and crisp. Once home, do not clean them right away.  Water on the leaves creates a home for mold and the plant will deteriorate much faster with damp leaves.  Instead, wait till just prior to use, before rinsing them – but RINSE them before consumption.     Today is National Meatball Day, so I thought I would share MY PERSONAL meatball recipe.  After I researched many recipes for the perfect, EASY meatball, I have designed this recipe.  Let me know if you try them.     This is a very simple recipe, using pantry staples. I make this for Sunday afternoon when we are watching football. We love it with Tostitos. I have made this hot spinach and artichoke dip several times.  Last week, it was our lunch on a lazy Sunday afternoon.  I have made this ahead of time and reheated on a grill for a NASCAR TAILGATE party.  Both times it was great.
