Top 5 Criteria For The Most Tender Steak

    July 28, 2016

Carnivores crave a most tender, juicy steak? Steak and potato is probably the most popular comfort food for meat-eating Americans. My husband and I have steak at least once a week, usually on Friday’s after a long work week. Such a simple meal requires very little clean up required. Perfect for a Friday evening at home. Also, cooking steak at home is much, much more economical than dining out for steak. Lastly, you control your steak, therefore, with practice, you can cook your steak exactly like you want it. As I promised to my subscribers, earlier this week; Here are my top 5 criteria (no particular order) for GRILLING the…

Burlington, North Carolina Approves Produce Stands

    July 26, 2016

As an avid supporter of sustainable living, I try to frequent my local Travelers Rest Farmer’s Market  to buy locally grown vegetables and products made by other local residents.  This not only helps the local community but also provides a healthier meal plan for my family. Burlington, North Carolina has realized these benefits and has agreed to amend their ordinance for residential produce markets. Under the previous ordinance, plants, fruits and vegetables could only be sold in a residential area if the crops were physically grown on the same property.  Former City Manager Harold Owen says is just not realistic given the city’s population density.  He knew changing the ordinance…

Grilled Steak Tips and Potatoes on Kebabs

    July 25, 2016

Kebabs are an easy way to control portions and eat healthy because you will cook them on the grill. Something simple and expensive like steak tips and potatoes can become a luxurious meal.   Usually, the trick is making simplicity taste like it was complicated.  This America’s Test Kitchen recipe for the sour cream-chive sauce is fresh and taste like summer.  This recipe calls for the meat TO MARINATE FOR AT LEAST 2 HOURS OR UP TO 24 HOURS.  My recommendation is to prep the meat, placing it in the marinade before you start your workday.  After the 8-9 hour workday, the meat will be perfect.    Tricks I learned while…

Mac’s Speed Shop Offers More Than Barbecue

    July 22, 2016

Mac’s Speed Shop is a restaurant originally opened 11 years ago, in Charlotte, North Carolina.  Currently with six locations between North and South Carolina, the five owners take pride in their concept of “traditional barbecue” matched with good beer; however, the restaurant offers other comfort foods such as burgers, wings and their popular Mac ‘n Cheese.  Although reluctant to eat restaurant style barbecue, my husband and I visited because I wanted a good burger. Atmosphere Advertised as a “beer, bikes and bbq bar,” I was a little intimidated, but their casual, open atmosphere put my mind at ease right away.  The high ceilings and exposed duct system lends itself to…

    Weeknight Meaty Skillet Lasagna

    July 21, 2016

This Meaty Skillet Lasagna is simple and requires only a 10″ non-stick skillet for cooking. Because I have a bounty of tomatoes from my garden, I substituted the 28-ounce can of whole peeled tomatoes with ones from my garden. Since the recipe calls for the canned tomatoes to be placed in a food processor, I cored out my tomatoes, quartered them, pulsed twice in my Vitamix to make a chunky puree, perfect for this recipe.   Do not use “no-boil” lasagna noodles in this recipe, as they will fall apart during cooking.  Make sure to use either whole-milk or part-skim ricotta, as the NON-FAT ricotta will result in a very…
