Skillet Lasagna For Two Without Leftovers

    March 31, 2017

Three Meals for Two People Meal Three: Meaty Skillet Lasagna This meaty skillet lasagna is simple and scaled-down, requiring very little prep and it will not leave behind a wake of dirty dishes nor leftovers. Do not substitute no-boil lasagna noodles for the traditional, curly-edged lasagna noodles here because the no-boil noodles will fall apart.   Most lasagna recipes are constructed to serve 8-10 people.  Here, we just want enough to serve two people; however, this recipe is so filling, it could serve three people easily. This recipe recommends using 85% lean ground beef to cut down on the amount of grease; however, the beef is not as flavorful as Italian…

    Indonesian Rice for Two

    March 29, 2017

In our cooking for two series, this week, we made Indonesian Rice and it was just enough for two. This is a simple dinner but is very filling. The original recipe from America’s Test Kitchen calls for Thai chilies. I do not like hot, spicy foods, so I used banana peppers instead (still removing the seeds).  I prepped my white rice ahead of time and just slowly allowed it cool on the stovetop. Cook your rice according to package directions to yield 3 cups (1.5 cups per serving) Indonesian Rice For Two Recipe

Should We Worry About Lycopene in Our Food?

    March 23, 2017

At a loyal reader’s request, I am taking a look at Lycopene in our food and if it can benefit a healthy lifestyle. Subscriber, Renee G said, “LYCOPENE: I would love to know what foods have it, how the body uses it, and if there is research showing effects on skin cancer rates.” What is Lycopene? (Lie-co-peen) – is a chemical compound that gives some vegetables and fruits, their vibrant color.  Found in watermelons, pink grapefruits, apricots, guava, papaya, and red oranges; and particularly high amounts in tomatoes and tomato products.   In North America, 85% of dietary lycopene comes from tomato products such as tomato juice or paste. One…

A Humble Version of Bangers and Mash

    March 16, 2017

Origination of the humble Bangers and Mash Thought to be an Irish dish, Bangers & Mash originates throughout the British Isles, a group of islands including Great Britain, Ireland, and over six thousand smaller isles. In native British terms, the “bangers” portion of the dish has been linked to the World War I meat shortage.  Sausages were produced with such a high water content, they popped under high heat cooking methods. Modern sausages do not contain such a high water content. Construction of Bangers & Mash Bangers & Mash can be constructed using any type of sausage you like.  Traditional dishes are made of pork or beef, or a Cumberland…
