10 Foods Your Skin Will Love

    May 23, 2018

We should be eating more foods our skin will love because it is summertime.  Whether on vacation – working in our yards – or getting our gardens to grow, we are very susceptible to the harsh sun. Our doctors have always warned us about long-term exposure to the sun and how it will accelerate the effects of aging and increase our risk of developing skin cancer. “Cumulative sun exposure causes mainly basal cell and squamous cell skin cancer, while episodes of severe sunburns, usually before age 18, can raise the risk of developing melanoma.”  According to WebMD: “Over time, the sun’s ultraviolet (UV) light damages the fibers in the skin called elastin. When these fibers break…

4 Recipes to Use Leftover Holiday Ham

    December 29, 2017

I have four recipes to use your leftover holiday ham from Christmas.  Do you plan to make a ham for New Year’s dinner?  You are going to have some leftover ham at some point.  Don’t throw it away!  Strategically plan dinners and snacks, with JoAnn’s Food Bites, and you can rid your fridge of that leftover ham. Inspirational Holiday Ham I was perusing through a Facebook Foodie Forum and stumbled upon a home chef’s post, which read, in most part… “I need inspirational recipes to use up all the leftover ham I have from the holiday.” Which inspired me to do some brainstorming and come up with at least FIVE…

Zucchini Tots on National Zucchini Day!

    August 8, 2016

National Zucchini Day with Zucchini Tots! Zucchini has long been thought of as a vegetable, as it belongs to the squash family, but botanically, it is a fruit because it grows from a flower.  It can grow to a meter in length, however, it is usually harvested when it is half that size.  Traditionally green; however, the golden zucchini, a related hybrid is a deep yellow or orange color. They are very low in calories and contain good amounts of potassium and Vitamin A. The flower of the plant is edible and can be used as a garnish for presentation.   Last month, my daughter-in-law made Zucchini Tots courtesy of…

    Savory Spinach and Artichoke Dip

    March 7, 2016

This is a very simple recipe, using pantry staples. I make this for Sunday afternoon when we are watching football. We love it with Tostitos. I have made this hot spinach and artichoke dip several times.  Last week, it was our lunch on a lazy Sunday afternoon.  I have made this ahead of time and reheated on a grill for a NASCAR TAILGATE party.  Both times it was great. PREP TIME: 30 MINUTES     MAKES 3 CUPS Make sure to squeeze as much water as possible from the spinach and artichoke hearts.  I serve mine with tortilla chips. Adjust oven rack to the middle position and heat oven to 350º. Mix all…

    The Easiest Party Appetizer Ever!

    April 19, 2011

This is the easiest and tastiest party appetizer I have ever made. Make this, allow it to chill, and I promise it will be a hit at any gathering you attend. My husband and I have even made this a meal during the summer months when we did not really want to cook anything.  Chicken Cheeseball Appetizer This recipe was given to me, by a neighbor, over 10 years ago.  She was surprised, I had never heard of this delicious treat. Using three pantry staples, anyone can make this and be a hit at the next friendly get-together.   I allow mine to chill for at least three hours for…
