    July 18, 2019

Being one-half of the professional barbecue competition team, Smokin J’s Barbeque, I must figure out how to use leftover pulled pork, barbecue chicken, and beef brisket, regularly. For our most recent competition, The South Carolina Festival of Discovery, we only had pulled pork and brisket leftover. So, I created these brisket tacos, on the fly, incorporating my simple homemade salsa. Putting Garden Tomatoes to Good Use This year, my garden has been graciously supplying many tomatoes! My patio tomatoes have actually…

    Growing and Cooking Onions

    July 11, 2019

Growing and cooking onions are treasured around the world for their pungent flavor and versatility in many dishes. Onion Characteristics There are two main classifications of onion – green onions, aka scallions, and dry onions, which are mature onions with a juicy flesh covered with dry, papery skin. There are dozens of dry onion varieties – way too many to go into for this post; however, we will concentrate on the stronger flavored, globe onion, which is what I used for the smothered pork steak recipe below. Globe onions can be yellow, red or white and range from 1-inch diameter, up to 4-inches. Rich in flavor and mildly pungent, these…

    February 20, 2019

While attending the Farm to Institution Summit in Greenville, South Carolina, I was slapped with a staggering statistics: 86-MILLION ADULTS IN THE UNITED STATES HAVE PREDIABETES That is one in every three adults.  And 90% of those adults, do not know they have prediabetes. Although our own individual genetic disposition plays a key factor in developing diabetes, health and lifestyle decisions increase the chances of developing the condition; including Obesity A sedentary lifestyle Bad eating habits Determine if you are at risk for Prediabetes or Diabetes The American Diabetes Association has a test, to determine if you are at risk for either prediabetes or type 2 diabetes (your body does not…

    Food To Help Manage Hypertension

    July 11, 2018

I was diagnosed with hypertension when I was 25 years old and suffering from chronic migraines. Research suggests if your family records reveal a history of hypertension, it can increase your risk by 60%. Several blood relatives on my mother and father’s side of the family suffered from elevated blood pressure. Prior to my diagnosis, a variety of doctors, including a neurologist performed several CT’s,  and asked me to keep a daily journal of my blood pressure. Treatment included several attempts to find the appropriate prescription, which resulted in a daily dose of  Ziac, which continues to this day. What is hypertension? Hypertension basically means, while your heart is beating,…
