    Lightlife’s Savory Plant-Based Food Innovations

    February 8, 2018

As I mentioned at the beginning of the year, one of the biggest food trends for 2018 will be the expansion of plant-based food innovations, such as plant protein sources and Lightlife is one of the pioneers. Read my Food Trends for 2018 article here Plant-based diets are dominating the food world.  Several manufactures are diving head first into using science to manipulate plant-based ingredients resulting as innovative products. Lightlife uses plant proteins, such as soy and beans to create delicious, healthy food choices for those wanting to steer away from meat based protein sources. What is Lightlife? A Humble Version of Bangers and Mash

    March 16, 2017

Origination of the humble Bangers and Mash Thought to be an Irish dish, Bangers & Mash originates throughout the British Isles, a group of islands including Great Britain, Ireland, and over six thousand smaller isles. In native British terms, the “bangers” portion of the dish has been linked to the World War I meat shortage.  Sausages were produced with such a high water content, they popped under high heat cooking methods. Modern sausages do not contain such a high water content. Construction of Bangers & Mash Bangers & Mash can be constructed using any type of sausage you like.  Traditional dishes are made of pork or beef, or a Cumberland…

    Foodie Heaven at Lowes Foods

    November 4, 2016

Based in Winston-Salem, North Carolina, Lowes Foods  opened their first location in the Upstate of South Carolina in late September.  I finally visited a couple of weeks ago and boy, was I amazed. Visiting a Lowes Foods is not a normal trip to the grocery store, be prepared to spend most of the afternoon pursuing isles and isles of typical grocery store chain fair, but the additional amenities are what makes this supermarket stand out from the rest. Extra Amenities at Lowes Foods   I usually only cook for two people and my husband hates leftovers, which proves to be difficult when buying produce.  Many produce options at Lowes Foods…

    Upscale Potato Sausage Hash

    October 17, 2016

I LOVE POTATOES, so much so, you would think I was part Irish.  Around 1845, approximately one million people died in Ireland due to a potato disease knows as “blight.” Some historians believe the pathogen originated in Mexico, where it had already been found, then spread to crops in the United States, making its way to Ireland, via passenger ships sailing from America to Ireland.  Because of Ireland’s deep dependency on the potato, it is estimated half the entire country’s potato crop was destroyed. There are over 50 varieties of potatoes registered with the National Potato Council, however, China leads the world in potato production, almost three times more than…

National Meatball Day! – Easy Italian Sausage Meatballs

    March 9, 2016

Today is National Meatball Day, so I thought I would share MY PERSONAL meatball recipe.  After I researched many recipes for the perfect, EASY meatball, I have designed this recipe.  Let me know if you try them. PREP: 20-25 MINUTES    MAKES ABOUT 2 DOZEN 1/4 cup extra virgin olive oil; 1 teaspoon crushed red pepper flakes; 1 Tablespoon dried oregano; 1 Tablespoon dried thyme; 1 teaspoon Kosher salt; 1 lb of mild Italian sausage (I purchased the links, but you can use ground sausage instead); 1 cup dry breadcrumbs (I used the Italian flavored); 1/3 cup freshly grated Parmigiano-Reggiano Cheese; 1/4 cup FRESH chopped Italian parsley; 2 garlic cloves, minced;…
