    July 25, 2020

When you are creating delicious Mexican food, much of the flavor that you’re going to infuse will come from seasoning and spices. There is a misconception that all spices in Mexican food mean spicy food. Which isn’t true. They bring a depth of flavor and richness that elevate your dishes to a new level.  Mexican food is known for its layers of flavors, warmth, freshness, and depth. That’s why when you head out for an authentic Mexican meal to somewhere like Barrio Queen Mexican Food, you know you’re in for a taste sensation.  The right spices can bring a simple vegetable side dish or a meat-heavy main meal to something…

    Garlic Adds Depth to Dishes

    April 6, 2018

My absolute favorite aroma from the kitchen occurs when I am sauteing butter, onions and garlic. Garlic is one – if not – the most versatile seasoning agent in the food world! A member of the lily family, garlic is a cousin to leeks, chives, onions and shallots. The edible bulb, or “head” grows below the ground.  The bulb consists of sections called cloves, each encased in its own parchment like membrane. Types of Garlic In the United States, there are three major types of garlic;                 Buying Garlic Fresh garlic is available at your local supermarket year round. Purchase firm, plump bulbs…

    Indonesian Rice for Two

    March 29, 2017

In our cooking for two series, this week, we made Indonesian Rice and it was just enough for two. This is a simple dinner but is very filling. The original recipe from America’s Test Kitchen calls for Thai chilies. I do not like hot, spicy foods, so I used banana peppers instead (still removing the seeds).  I prepped my white rice ahead of time and just slowly allowed it cool on the stovetop. Cook your rice according to package directions to yield 3 cups (1.5 cups per serving) Indonesian Rice For Two Recipe

    End of Summer Salad

    September 26, 2016

Although the calendar indicates it is the end of summer, Mother Nature in South Carolina is not paying attention. Yesterday it was 92º and today it will be the same, nevertheless, most farmers’ markets are closing down or will be in the next two weeks.  This end of summer celebration, because I hate the hot weather, was perfect for dinner, after finishing up a hot summer day.  Light, refreshing and colorful, if you are a vegetable fan, you will love this easy to prepare salad.  Because the vinaigrette is so prominent in this recipe, using good, fresh ingredients is important and will make a difference.  Keep in mind, the vinaigrette…

Easier Risotto with Chicken and Leeks

    January 18, 2016

If you have ever tried to make risotto you know it is a long process. Typically, you must constantly stir the rice while it absorbs all the liquid of your broth – which could take 30-45 minutes. I don’t know about you, but I cannot stand in the kitchen for 45 minutes, STIRRING CONSTANTLY! Who has time for that? NOT ME. After testing Cook’s Illustrated’s version of “Almost Hands-Free Risotto,” I can assure you, this process is much easier. You still need patience, but it is not as labor-intensive. Leeks are a great risotto accompaniment. You do not have to add the chicken to this dish. Leave out the chicken…
