Simple Supper: One Pot Pasta with Spinach & Tomatoes

    May 12, 2016

Easy pasta dinner with a few ingredients… My favorite go to meal when I have no idea what to make for dinner is PASTA.  It is so easy to prepare and you only need a few ingredients to boost it up to an entree.  Served with a slice of bread, this is a meal that was a crunch time touchdown that only took about 30 minutes from start to finish. Ingredients needed: 1 Tablespoon of Olive Oil 1 cup of chopped onion 6 cloves of garlic, finely chopped 1 (14.5 ounce) can petite diced tomatoes – do not drain them 1 1/2 cups chicken stock – I use Swanson, unsalted…

    Spaghetti with Carbonara Sauce

    April 25, 2016

As one of my FAVORITE dishes ever, a good Spaghetti with Carbonara Sauce can be very difficult to make. I have tried at least a dozen different ways and although this particular recipe cannot be classified as EASY, it is not difficult – just takes patience and preparation.  That being said, make sure you have all your hardware and ingredients prepared before you get started, for a smoother cooking experience.  Because there is so few ingredients, it is especially critical to use good quality items.  Their flavor will be amplified in this dish.                     INGREDIENTS: Kosher salt 1 pound dried spaghetti…

    Products I Love: Ancient Harvest

    April 20, 2016

My husband and I love to eat pasta at least one night a week.  I am always searching for more healthy pasta options.  Recently, while eating lunch at  THE SWAMP RABBIT CAFE,  I stumbled upon Ancient Harvest.  After preparing it for dinner, we are searching for all their products. Ancient Harvest: Pasta Several pasta shapes were available, I picked up penne and spaghetti.  As a certified NON-GMO product, the ingredients are simple, corn, flour and quinoa flour. Much has been made of QUINOA and its health benefits.   Relativity new to the American market, quinoa was a staple food of the ancient Incas.  Quinoa is called a SUPER-GRAIN OF THE FUTURE…

    Forage for Ramps

    April 13, 2016

I am searching for RAMPS This article about foraging for ramps is very informative, with great photos.    I am on the hunt for wild ramps. I have never ate them before and cannot wait to try them.  Help me find a patch! My mom’s EASY Chicken Pot Pie Recipe

    April 11, 2016

As I said in a previous post, my mom had a strict food budget.  This chicken pot pie does not claim to use the freshest vegetables ever; however, it definitely is the least expensive chicken pot pie you will cook.  It is so easy and can be made in an hour.   Ingredients for easy chicken pot pie: 2 cans of boneless, white meat chicken or 4 chicken breast that have boiled to 165-170 degrees and diced. 1 can of Veg-all, drained 1 can of Campbell’s Cream of Mushroom Soup 4 boiled eggs 1 eight count canned biscuits Preheat oven to 375º. Layer all ingredients in a casserole dish.  Top…
