    Simplified Leek Potato Soup Recipe

    February 3, 2017

I have tested many, many different leek potato soup recipes, this simplified version is the easiest and flavorful. What are leeks? Native to Mediterranean countries, leeks hold a flavorful spotlight in today’s culinary scene. Although resembling a giant scallion or green onion, the leek is related to both the garlic and the onion, though its flavor and fragrance are milder and more subtle. It has a thick, white stalk, cylindrical in shape, and has a slightly bulbous root end. Leeks are available year-round in most regions. Tips When Using Leeks Choose those with crisp, brightly colored leaves and an unblemished white portion. Avoid those with withered or yellow-spotted leaves. The…

Effortless Chicken Thighs in a Creamy Sauce

    January 16, 2017

Chicken thighs are more flavorful than the breast cut and covering the thighs with a creamy sauce makes them more delightful. However, after making this incredible creamy sauce and nestling chicken thighs in the sauce,  I have started to change my tune. This dish is very good for a weeknight easy meal. I served it with simple yellow rice, mixed with some banana peppers that I froze back in the spring. After thawing the peppers, between two paper towels, I chopped them up and put them in the rice, at the same time I placed the rice on simmer. Lemon Meringue Pie

    December 2, 2016

As you might know, my husband is in the horticulture business. A couple of weeks ago, he brought home some lemons. Not ordinary lemons.  These lemons were bigger than my fist. Celebrating Thanksgiving a weekend early, I decided to attempt my first Lemon Meringue Pie.  I searched several recipe books, most of which only used a few tablespoons of fresh lemon juice. Having these enormous lemons, I needed a recipe requiring a significant amount of juice. Cook’s County to the rescue. Beautiful Lemon Meringue Pie Their recipe for Mile-High Lemon Meringue Pie requires an entire cup of freshly squeezed juice, plus some lemon zest. After some research, I discovered Lemon…

    Weeknight Chicken Enchilada Meal

    November 28, 2016

Looking for an easy prep, weeknight meal? Look no further than Chicken Enchiladas. I use the precooked, Perdue southwest chicken, which makes for simple prep work. Using my Pamper Chef chopper to cut up the onion and pepper. I cut the chicken down into bite size portions.  I do use a manual grater for my cheese prep. Do not buy the prep grated cheese, as it is loaded with chemical preservatives to prevent caking.  Buy block cheese and get a little exercise grating it up…it really does not take that long. There…your prep work is DONE. This makes about 4 servings and takes 55 minutes to prep and cook.  …

    5 Non-Food Thanksgiving Tips

    November 23, 2016

I am lucky, I have been invited to my dad’s house for Thanksgiving, which means, I do not have to prepare the traditional meal. However, I hosted a huge family Thanksgiving several years ago. There is more to it, than just cooking a turkey and few trimmings..   I wanted to give you my 5 non-food Thanksgiving tips. Use biodegradable plates, utensils and napkins Just because Thanksgiving is a bit more special than a weekly, family Sunday dinner, does not mean you cannot use disposable items.
