Pork Medallion Dinner in Under 30 Minutes

    October 3, 2016

It does not get any simpler than Pork Medallions with Mustard Sauce, for a weeknight meal.  There are only 200 calories per 3 ozs of pork with 2 Tablespoons of sauce, making this an excellent calorie-counting meal.  I was a bit apprehensive about this sauce, but it was so easy.  Make sure to have all your ingredients measured and ready to go, the sauce will prepare and move very quickly. I purchased one of those packaged, small Hormel tenderloins.  See if you can find the ones without a marinade already on the tenderloin. I couldn’t, so I bought the peppercorn tenderloin and rinsed off most of the peppercorns, then thoroughly…

    Elegance at Rick Erwin’s Clemson

    September 30, 2016

Need a romantic, elegant dinner spot for a special night, Rick Erwin’s Clemson location fits the bill.  Opened in October 2014, the Patrick Square location is an upscale dining option for the nearby residents,  a casual pizzeria is across the street.  Plenty of free parking is available.  Surrounded by single family homes, town homes and upscale business offices, the restaurant is a good option for after work drinks or a quiet anniversary dinner for two. Upon entering the foyer, the bar is to the left and the dining room is to the right.  Rick Erwin’s offers a beautiful, modern bar area with over 300 wine selections.  The perfect spot to…

    End of Summer Salad

    September 26, 2016

Although the calendar indicates it is the end of summer, Mother Nature in South Carolina is not paying attention. Yesterday it was 92º and today it will be the same, nevertheless, most farmers’ markets are closing down or will be in the next two weeks.  This end of summer celebration, because I hate the hot weather, was perfect for dinner, after finishing up a hot summer day.  Light, refreshing and colorful, if you are a vegetable fan, you will love this easy to prepare salad.  Because the vinaigrette is so prominent in this recipe, using good, fresh ingredients is important and will make a difference.  Keep in mind, the vinaigrette…

Gourmet Goodies at Vom Fass Greenville

    September 23, 2016

Ever wanted to sample a whiskey before you bought it?  Ever want to taste an aged balsamic vinegar before you invested in a bottle?  You can do both of these at Vom Fass, a 258-store franchise operation.  Originally from Georgia, I never enjoyed the Vom Fass experience; relocating to Greenville has yet another benefit.  Ms. Jeanj Brodnax-Martin owns the Woodruff Road location with her husband, Michael.  Providing “the world’s best retail-sampling experience,” Vom Fass has a practical way to engage visitors. The Vom Fass Experience You will open the front and discover alcohol is on the right, vinegar and olive oils are on the left.  Of course, I headed right. …

Marketing Food To Our Children – PART 4

    September 21, 2016

A four part series examining the United States Government’s relationship with the agricultural industry and how that directly affects your family’s health There is little doubt governmental policies regarding subsidizing farmers to grow more corn, soybeans, wheat and others have not changed since the 1940’s. Originally meant to help our country out of a depression, these policies have encouraged agribusiness to develop ways to create more, cheaper products using these subsidized crops.   These cheaper products, high-fructose corn syrup, nitrates, and other “processed” foods have directly impacted the health of our country.  Leading the world in heart disease, diabetes and obesity, America is falling into a desperate health crisis.  Despite…
