    Mango salsa anyone?

    June 30, 2011

Last night, I made my first mango salsa.  Not being a friend of many fruits, this was a big deal for me.  I get apprehensive about anything I don’t heat, cook or chill? Menu consisted of grilled lemon shrimp and grilled cod with a mango-mint salsa, over a rice pilaf. I wanted a light, refreshing dinner due to the extreme heat wave we have endured. Plus I wanted to use my recently harvested, burpless cucumbers.  I knew I needed to use some cod fillets I had in the freezer and being a sturdy, flexible piece of fish…tonight was the night. It is important to use rather large peeled & deveined…

    Friday Night Stir-Fry

    June 27, 2011

Stir-fry was a success! Excited about using a wok on the Big Green Egg, Doug wanted to prepare stir-fry and serve it with fried rice.  I began by prepping the vegetables, taking care to make each piece uniformly the same size.  I prepared zucchini (fresh from our garden), carrots, sweet onions, broccoli florets, snap peas, green bell pepper and red bell pepper. After the vegetables, I sliced chicken tenders, making each piece about the same thickness as the vegetables. All prep work complete; Doug brought the Big Green Egg to temp (400º).  After spraying a non-stick olive oil spray to his wok, he began adding the vegetables, over direct heat. …

    Henry’s Louisiana Grill

    June 22, 2011

Finding an exciting, authentic restaurant can be a daunting task; however, downtown Acworth has a locally owned eatery that fits the bill like no other. Henry’s Louisiana Grill is a Mari Gras party every night.  Owners Henry and Claudia Chandler have established somewhat of a legendary landmark along Main Street in Acworth.  Patrons come for all over the metro area to dine at this Cajun kitchen.  On a weekend, expect a wait of up to an hour; however, the food is well worth it. Chef Henry has developed a mouth watering menu with a festive, family friendly atmosphere. Chef Henry’s relaxed, comfortable personality shines through as he converses with his…

    Capers Restaurant and Bar

    June 14, 2011

For those local dinners that have eaten at Caper’s, they have actually relocated from downtown Kennesaw, to a strip center at Old Hwy 41 and Barrett Parkway; but remain in Kennesaw.  I had to visit to see if the quality would also move to the new location.  Known as Capers On Main, owner Veronica Dudley may have moved to a new location, but rest assure, the same rustic, Tuscan charm still exist at this locally owned restaurant.  Priding herself on savory food with a Mediterranean atmosphere, I cannot think of better food, better service and hospitality than I have received on my two visits to this establishment. (see review on…

    Herb Garden Update

    June 9, 2011

The 12 day heatwave of temperatures above 90º have not killed my herbs yet.  Lightly watering every other day, I have been able to keep them growing and pungent in flavor.  Two different Basil, two different sage, chives and oregano are all doing well.   Make sure to pick off new white flowers on your basil plants as this will keep them growing by encouraging new growth.
