Simple Asian Dinner: Pork and Rice

    June 30, 2017

This simple Asian dinner is my substitute for Chinese take out. Some Chinese take out is loaded in MSG, which I try to avoid. Although easy, this Pork and Rice dish is filling and a great option for a weeknight meal. It can be done in only one pot and one skillet, for less clean up. What is Monosodium glutamate? MSG is the salt-based compound used as a flavor enhancer in dishes that need a more intense “meaty” taste. Although deemed safe by the Food and Drug Administration, MSG is linked to severe headaches, bloating, and general discomfort. Found in many processed foods, it is harmful to those diagnosed with…

Pork Medallion Dinner in Under 30 Minutes

    October 3, 2016

It does not get any simpler than Pork Medallions with Mustard Sauce, for a weeknight meal.  There are only 200 calories per 3 ozs of pork with 2 Tablespoons of sauce, making this an excellent calorie-counting meal.  I was a bit apprehensive about this sauce, but it was so easy.  Make sure to have all your ingredients measured and ready to go, the sauce will prepare and move very quickly. I purchased one of those packaged, small Hormel tenderloins.  See if you can find the ones without a marinade already on the tenderloin. I couldn’t, so I bought the peppercorn tenderloin and rinsed off most of the peppercorns, then thoroughly…

    Maple-Glazed Stuffed Pork Roast

    November 1, 2011

Did you ever plan a romantic maple-glazed stuffed pork roast and then discover, you did not buy what you thought you did? I found a great recipe from Kraft Foods Magazine (which readers must now pay for when this magazine used to be free), Maple-glazed stuffed roast pork. I had purchased what I THOUGHT to be a pork roast, however, it turned out to be two small pork loins netted together. My husband created an ingenious solution. He suggested placing the stuffing in between the two loins, tieing the two loins together with butcher’s twine, and cooked it on the Big Green Egg for about 90 minutes or so…it was…
