    Being an avid home cook, over the years I have tried many chicken and dumplings recipes; including both of my grandmother’s versions. Although this recipe is simple, it does take about 90 minutes but the deep, full flavor will be so worth it on a cool autumn evening. The key is cooking not only thighs but also wings.     In our cooking for two series, this week, we made Indonesian Rice and it was just enough for two. This is a simple dinner but is very filling. The original recipe from America’s Test Kitchen calls for Thai chilies. I do not like hot, spicy foods, so I used banana peppers instead (still removing the seeds).  I prepped my white rice ahead of time and just slowly allowed it cool on the stovetop.     Chicken thighs are more flavorful than the breast cut and covering the thighs with a creamy sauce makes them more delightful. However, after making this incredible creamy sauce and nestling chicken thighs in the sauce,  I have started to change my tune. This dish is very good for a weeknight easy meal. I served it with simple yellow rice, mixed with some banana peppers that I froze back in the spring.
