    Easy Crispy Parmesan Chicken

    March 21, 2016

Why this recipe works:  To create a crisp coating that stays put, dredge the cutlets in flour, then dip them in beaten eggs, dredge them in Parmesan cheese enriched with black pepper, and finally more flour, which keeps the cheese in place.  Make sure your oil is very hot: if the oil is too cool, the cutlets will become greasy and won’t properly crisp. 1/2 cup + 1 Tablespoon all-purpose flour 3 large eggs 2 1/4 cups shredded Parmesan cheese (see note at the bottom) 2 teaspoons black pepper 4 thin-cut boneless, skin-less chicken cutlets (breast work the best) 1/4 cup vegetable oil 1.  Adjust oven rack to middle…

    March 9, 2016

Today is National Meatball Day, so I thought I would share MY PERSONAL meatball recipe.  After I researched many recipes for the perfect, EASY meatball, I have designed this recipe.  Let me know if you try them. Celebrate National Pig Day! with EASY Sautéed Pork Chop with Jack Daniel’s Glaze

    March 1, 2016

Today’s pork is leaner (about 1/3 fewer calories) and higher in protein than that consumed just 10 years ago. Pork is a great source of protein:  100 grams of roasted pork top loin contains 26.45 grams of protein. Roasted pork top loin is considerably lower in fat compared to most types of poultry, at 8.82 grams in 100 grams of pork, according to the USDA;  chicken with meat and skin has 13.39 grams. Most pork in the marketplace is CURED – like bacon and ham. Normal precautions should be taken, as with all raw meat. Never taste uncooked pork and thorough wash all kitchen items in contact with raw pork…
