    Effortless Chicken Thighs in a Creamy Sauce

    Chicken thighs are more flavorful than the breast cut and covering the thighs with a creamy sauce makes them more delightful. However, after making this incredible creamy sauce and nestling chicken thighs in the sauce,  I have started to change my tune. This dish is very good for a weeknight easy meal. I served it with simple yellow rice, mixed with some banana peppers that I froze back in the spring. After thawing the peppers, between two paper towels, I chopped them up and put them in the rice, at the same time I placed the rice on simmer.     Looking for an easy prep, weeknight meal? Look no further than Chicken Enchiladas. I use the precooked, Perdue southwest chicken, which makes for simple prep work. Using my Pamper Chef chopper to cut up the onion and pepper. I cut the chicken down into bite size portions.  I do use a manual grater for my cheese prep. Do not buy the prep grated cheese, as it is loaded with chemical preservatives to prevent caking.  Buy block cheese and get a little exercise grating it up…it really does not take that long.     As I said in a previous post, my mom had a strict food budget.  This chicken pot pie does not claim to use the freshest vegetables ever; however, it definitely is the least expensive chicken pot pie you will cook.  It is so easy and can be made in an hour.   Ingredients for easy chicken pot pie: 2 cans of boneless, white meat chicken or 4 chicken breast that have boiled to 165-170 degrees and diced. 1 can of Veg-all, drained 1 can of Campbell’s Cream of Mushroom Soup 4 boiled eggs 1 eight count canned biscuits Preheat oven to 375º.
