Cubed steak was a staple in our house, growing up in Georgia. It is a cheap cut of beef, which is usually very tough. Pan frying it, allows drippings to form the base of the good ‘ole white gravy, we southerners like to put on anything. Patience is important, as well as very hot pan, when making homemade gravy. Use good quality milk, as it is the main ingredient in this smothering sauce. As my first entire meal plan post; this will take you step-by-step through the PREP and COOKING stages of this meal. Hope you enjoy it. PREP POTATOES Peel russet or Yukon Gold potatoes. Cut into 1/2″ or…

Effortless Chicken Thighs in a Creamy Sauce
Chicken thighs are more flavorful than the breast cut and covering the thighs with a creamy sauce makes them more delightful. However, after making this incredible creamy sauce and nestling chicken thighs in the sauce, I have started to change my tune. This dish is very good for a weeknight easy meal. I served it with simple yellow rice, mixed with some banana peppers that I froze back in the spring. After thawing the peppers, between two paper towels, I chopped them up and put them in the rice, at the same time I placed the rice on simmer. Fish Tacos: 100 Day Real Food Challenge
Challenge is an UNDERSTATEMENT. When your household hates vegetables and you are a foodie, this 100 days of real food is nearly impossible. Today’s recipe is in Lisa Leak’s new cookbook, 100 Days of Real Food: Fast & Fabulous: The Easy and Delicious Way to Cut Out Processed Food. It cannot contain hydrogenated oils or high fructose corn…

Upscale Potato Sausage Hash
I LOVE POTATOES, so much so, you would think I was part Irish. Around 1845, approximately one million people died in Ireland due to a potato disease knows as “blight.” Some historians believe the pathogen originated in Mexico, where it had already been found, then spread to crops in the United States, making its way to Ireland, via passenger ships sailing from America to Ireland. Because of Ireland’s deep dependency on the potato, it is estimated half the entire country’s potato crop was destroyed. There are over 50 varieties of potatoes registered with the National Potato Council, however, China leads the world in potato production, almost three times more than…

Pork Medallion Dinner in Under 30 Minutes
It does not get any simpler than Pork Medallions with Mustard Sauce, for a weeknight meal. There are only 200 calories per 3 ozs of pork with 2 Tablespoons of sauce, making this an excellent calorie-counting meal. I was a bit apprehensive about this sauce, but it was so easy. Make sure to have all your ingredients measured and ready to go, the sauce will prepare and move very quickly. I purchased one of those packaged, small Hormel tenderloins. See if you can find the ones without a marinade already on the tenderloin. I couldn’t, so I bought the peppercorn tenderloin and rinsed off most of the peppercorns, then thoroughly…
