4 Recipes to Use Leftover Holiday Ham

    December 29, 2017

I have four recipes to use your leftover holiday ham from Christmas.  Do you plan to make a ham for New Year’s dinner?  You are going to have some leftover ham at some point.  Don’t throw it away!  Strategically plan dinners and snacks, with JoAnn’s Food Bites, and you can rid your fridge of that leftover ham. Inspirational Holiday Ham I was perusing through a Facebook Foodie Forum and stumbled upon a home chef’s post, which read, in most part… “I need inspirational recipes to use up all the leftover ham I have from the holiday.” Which inspired me to do some brainstorming and come up with at least FIVE…

Egg and Pepper Brunch for Two

    April 25, 2017

Wanting to find new Sunday brunch ideas, I was inspired by a recent episode of America’s Test Kitchen. They constructed a brunch recipe named for the northeastern region of Spain, the Basque region. Dividing France and Spain, the Basque region is known for their vast produce choices, including six different varieties of peppers. Although my recipe does not include these exotic peppers, I wanted a recipe which would stimulate my sense of smell, taste and sight. America’s Test Kitchen developed an Eggs Piperade recipe.  It suggests cooking the vegetables separate from the eggs; a method that prevents the eggs from being stringy and wet. The peppers are able to retain…

    Indonesian Rice for Two

    March 29, 2017

In our cooking for two series, this week, we made Indonesian Rice and it was just enough for two. This is a simple dinner but is very filling. The original recipe from America’s Test Kitchen calls for Thai chilies. I do not like hot, spicy foods, so I used banana peppers instead (still removing the seeds).  I prepped my white rice ahead of time and just slowly allowed it cool on the stovetop. Cook your rice according to package directions to yield 3 cups (1.5 cups per serving) Indonesian Rice For Two Recipe

    Empty the Fridge Breakfast Burrito

    September 19, 2016

My husband HATES leftovers.  So, I usually devise new ways to incorporate leftovers into new dishes.  He will never realize he is eating leftovers, if I call it something totally different.  Saturday morning, I realized I had several odds and ends in the fridge, so I concocted a breakfast burrito to get rid of these few little items. Breakfast burrito ingredients This aioli by Stonewall Kitchen is so light and a great addition to anything containing bacon.  Since I had a few slices of bacon leftover and this was going to be a “breakfast” dish, I decided to use the aioli as a sauce, at the base of each burrito. …

    Breakfast Brunch Scramble

    July 18, 2016

I love scramble recipes.  I consider a “scramble,” as any dish that includes scrambled eggs, combined with meat, starch, and vegetables, cooked in a cast-iron skillet with very little fat. So, Sunday around lunchtime, I wanted some kielbasa and eggs.  Well, what best way to combine these, as to make a scramble.  After searching for some simple recipes, to no avail…I made up my own.  Let me know if you try it and what you think.     Ingredients Vegetable oil 2 cups frozen cubed hash brown potatoes, thawed 16 oz kielbasa sausage, or beef sausage 10 oz bag of frozen tri-medley mix, thawed (contains onions, celery, peppers) 6 eggs…
