    Empty the Fridge Breakfast Burrito

    September 19, 2016

My husband HATES leftovers.  So, I usually devise new ways to incorporate leftovers into new dishes.  He will never realize he is eating leftovers, if I call it something totally different.  Saturday morning, I realized I had several odds and ends in the fridge, so I concocted a breakfast burrito to get rid of these few little items. Breakfast burrito ingredients This aioli by Stonewall Kitchen is so light and a great addition to anything containing bacon.  Since I had a few slices of bacon leftover and this was going to be a “breakfast” dish, I decided to use the aioli as a sauce, at the base of each burrito. …

History of the delicious, creamy milkshake

    September 12, 2016

So today, I am not feeling very well.  Fighting a sinus infection.  So, what do I discover…it is CHOCOLATE MILKSHAKE DAY and it is my favorite food in the world! I have long since thought, sinus issues and drinking milk were a big “no-no.”  However, as I found in this article, researched published in “The American Review of Respiratory Disease,” disputes this as myth; finding no correlation with milk consumption and the increase of sinus mucus. Milk and other dairy products are often blamed for additional production of mucus that can cause sinus problems but this may by a myth. A study published in “The American Review of Respiratory Disease”…

    Braised Halibut With Leeks

    August 29, 2016

What is braising? Braising involves cooking a protein in a small amount of liquid at low heat, covered for an extended amount of time.  This method allows for flavorful, tender food, by breaking down the fibers.  A tight-fitting lid is important.  Do not create too much liquid either, this can cause the fish to become mushy. This recipe is from America’s Test Kitchen Season 16 and provides a light, easy weeknight meal.  Halibut is an expensive cut of fish.  It is low in fat, white, firm, and has a buttery flavor.  Make sure to buy fillets, which are usually available either fresh or frozen. Cutting Leeks It is very important…

    Making Baked Ziti with Macaroni

    August 23, 2016

What is Baked Ziti? Traditionally, Baked Ziti is an Italian casserole dish, cooked with tomato sauce and cheese.  After searching my pantry, I discovered I did not have any Ziti, nor Penne pasta, both used interchangeably in this classic recipe.  Because Ziti and Penne are tubular pasta, why couldn’t I use elbow macaroni, of which I had plenty of?  This dish turned out to be a “use up what is in the fridge” dish, which us home cooks – LOVE! Legend notes upon being served a dish of macaroni, an early Italian sovereign exclaimed, “Macaroni!” Which means “how very dear.”  This semolina and water-based pasta do not usually contain eggs…

Zucchini Tots on National Zucchini Day!

    August 8, 2016

National Zucchini Day with Zucchini Tots! Zucchini has long been thought of as a vegetable, as it belongs to the squash family, but botanically, it is a fruit because it grows from a flower.  It can grow to a meter in length, however, it is usually harvested when it is half that size.  Traditionally green; however, the golden zucchini, a related hybrid is a deep yellow or orange color. They are very low in calories and contain good amounts of potassium and Vitamin A. The flower of the plant is edible and can be used as a garnish for presentation.   Last month, my daughter-in-law made Zucchini Tots courtesy of…
