Skillet Sirloin Tips and Gravy over Rice

Skillet Sirloin Tips and Gravy

An easy weeknight meal for two which pairs great with mashed potatoes.
I recommend making this sauce for other proteins. It is rich, but not sweet.

  • 2 Tablespoons olive oil
  • 1/2 red onion chopped
  • 1 lb sirloin steaks cut into 1 1/2 inch cubes
  • 3/4 cup low-sodium chicken broth
  • 2 Tablespoons your favorite sweet barbecue sauce
  • 1 Tablespoon heavy cream
  • 2 Tablespoons unsalted butter

  • Heat 1 Tablespoon of the olive oil in a large non-stick skillet over medium-high heat until shimmering.
  • Cook onion and a pinch of salt, until slightly softened and lightly browned (about 5 minutes). Remove from skillet; set aside.
  • Pat steak cubes dry with paper towels and season with salt and pepper.
  • Heat the remaining oil in an empty skillet till very hot.
Cook steak until browned on all sides and cooked to desired doneness, 6 - 8 minutes.
Transfer to a plate and tent with foil to keep warm.
  • Add browned onions back into the pan, along with the broth, and add barbecue sauce.
    Simmer over medium-low heat.
Gently whisk until slightly thickened (about 5 minutes).
  • Add cream, and season with salt and pepper.
    Stir for another minute.
  • Spoon sauce over steak tips and serve.

If you buy sirloin steaks and cut your own cubes, make sure to cut with the grain of the meat as much as possible to ensure tenderness.
