Quick Pasta Cream Sauce

Flexible cream sauce for any pasta.  Paired with a lean protein, such as chicken, this is a delicious, weeknight meal.

  • 1 T. Olive Oil
  • 1 Shallot chopped or 2 green onions chopped
  • 2 cloves of garlic minced
  • 3 T. roasted red peppers jarred
  • 1 1/2 - 2 cups half and half
  • Pinch of red pepper flakes
  • 1 t. sweet paprika
  • salt and pepper
  • 1 cup shredded mozzarella
  • use pasta water to thin sauce


  • Saute olive oil, shallot, garlic and peppers in pan.
  • Add half and half, stir
  • add red pepper flakes, salt and pepper, paprika
  • Gently stir in mozzarella cheese
  • slowly cook on lowest heat
  • simmer but do not boil
  • use pasta water to thin sauce
  • garnish with fresh basil
