Beef Kebabs make an easy, great summertime dinner.
Marinated and grilled, these will make for an easy clean up.
I use metal skewers but if you decide to use wood skewers, make sure to soak them in water for at least 20 minutes prior to prepping.

Ingredients for Beef and Vegetable Kebabs
I purchased (2) sirloin steaks, totaling 1 lb, which was plenty for two people. Trim off all marbling and cut into 1 to 1 1/2 inch cube pieces.
In a large bowl mix the following for the marinade:
1/4 cup extra-virgin olive oil
2 1/2 Tablespoons dried oregano
2 Tablespoons of soy sauce
2 Tablespoons red-wine vinegar
1 1/2 Tablespoons Worcestershire sauce
2 teaspoons white granulated sugar
2 medium cloves of garlic chopped, roughly 2 teaspoons
After cutting the meat into chucks, season with 1 teaspoon of kosher salt and 1 teaspoon ground black pepper.
Place meat in bowl and mix up thoroughly coating the meat.
Refrigerate, covered for at least 8 hours. I marinated mine for 48 hours.
When ready to cook, prepare the vegetables:
Before sliding vegetables on skewers, using a paper towel dipped in olive oil, wipe down both sides of metal skewers. This will allow vegetables to slide on very easily.
8 cherry tomatoes. Easiest to skewer tomatoes from end to end, vertically (see photo)
1 large Vidalia onion. Easiest to skewer by cutting into quarters, then cutting again. Skewer the onions through several layers to keep them on the skewer (see photo).
3 patty pan squash – quartered then skewered
1 red bell pepper – seeded and stem removed, then sliced and skewered.
After vegetables are prepared and skewered, I used my olive oil atomizer and sprayed both sides of vegetables. I did NOT spray the beef, as it had marinated in oil for 2 days already.
Because vegetables cook at different rates, I placed only one type of vegetable on one skewer.
Heat grill up to 400º. No need to oil the grill grates because all food already will have oil on them so they will not stick.
Place meat and all vegetables on the grill EXCEPT for the tomatoes. Allow 4-5 minutes for searing, turn over all kebabs. Allow 2nd side to cook for 3-4 minutes. Meat should be done, remove. Add tomatoes to grill. Close lid and allow to cook for 2-3 minutes. Open grill, check vegetables and turn tomatoes. Allow 2nd side to cook for 2-3 minutes.
Everything should be done. Carefully, remove all meat and vegetables from skewers.
I served with a ranch dip mix. Enjoy.
